We love all things strawberry in our family! Strawberry cake, strawberry ice cream, strawberry jam, strawberry sweet rolls and our most recent obsession is this Strawberry Soda Pop Cake. Full of strawberry flavor and served cold for a refreshing summer dessert. Best of all this cake gets better the longer it sits making it the perfect make ahead dessert for you next summer barbecue, picnic or pool party.
How to make Strawberry Soda Pop Cake:
You'll start by mixing a boxed strawberry cake mix according to package directions. Pour batter into an 8x13 dish and bake. After the cake is cooked through remove from oven and using the end of a spoon or other utensil poke holes all over the cake. The more holes the better so all the liquid goodness can get down in there.
In a medium sized bowl, combine strawberry gelatin with 1 cup boiling water. Stir until gelatin dissolves. Mix in 1 cup strawberry soda pop, such as Fanta, Sunkist or Crush.
To make the vanilla pudding topping, mix 1 box instant vanilla pudding with 2 cups cold milk. Whisk until well combined. Place in the refrigerate for 10-15 minutes to set up. Once the pudding has thickened stir in whipped topping. Spread mixture evenly over the top of the cake.
Top with fresh sliced strawberries. Cover and refrigerate for a minimum of 4 hours or overnight. This cake is best served the next day!

Strawberry Soda Pop Cake
Ingredients:
1 box strawberry cake mix, prepared according to package directions
1 3.5 oz box instant vanilla pudding
2 cups cold milk
8 oz whipped topping
1 3.5 oz box Strawberry Gelatin
1 cup boiling water
1 cup strawberry soda pop
1 lb frozen sliced strawberries in sugar, thawed
2 cups sliced fresh strawberries
Instructions:
Prepare strawberry cake in a 8x13 dish and bake according to package directions.
While cake is baking, whisk vanilla pudding and milk together until combined. Place in refrigerator for 5-10 minutes to set up.
When cake is finished baking and still warm use the end of a wooden spoon to poke holes all over cake.
In a medium sized bowl combine strawberry gelatin with 1 cup hot water. Stir until gelatin dissolves. Add 1 cup strawberry soda and stir.
Pour gelatin and soda mix all over cake into holes.
Top with thawed, frozen strawberries, pouring any juice into holes.
Fold whipped topping into pudding until well combined.
Spread pudding mix evenly over cake and top with fresh strawberries.
Refrigerate for at least 4 hours or overnight before serving.
Store covered in the refrigerator for up to 5 days.
