This Red, White and Blue Jell-O Poke Cake is a fun and festive dessert for your Memorial Day or Fourth of July party. Not only is it delicious but it's so easy to make. Best of all this cake gets better the longer it sits making it the perfect prep ahead dessert for your next Summer party.
A Jell-O Poke Cake is a delicious and easy dessert everyone always loves. Made ahead and served chilled it's the perfect summer dessert. I made this one patriotic for Memorial Day or Fourth of July but it is so versatile to fit your taste buds and theme. This Red, White and Blue turned out so delicious with berry blue and strawberry Jell-O. I've also made Strawberry Poke Cake by using strawberry cake mix with strawberry Jell-O and a chocolate version that were just as yummy and easy.
Red, White & Blue Jell-O Poke Cake is easy to make with just three simple ingredients. Let's take a look at what you'll need.
Cake Mix - I used boxed cake mix and prepared it according to the box directions. You can make your cake from scratch if you prefer. White cake mix was perfect for my red, white and blue theme but you could also use yellow, strawberry or Funfetti depending on the flavors and theme you're going for. You will bake the cake mix in a 9x13 pan.
Jell-O - Jell-O is what makes this cake so moist and delicious. I used berry blue and strawberry mix for my patriotic theme. You will mix the powder with 1 1/2 cups water and immediately pour in the holes in your cake while it is still liquid. You can add as much or little Jell-O as you want. I only used about half of each flavor for mine because l wanted some of the white cake to show.
Toppings - Spread whipped topping over the top of the cake. Add sprinkles, candies, fresh fruit or use food coloring to dye your whipped topping for extra fun. For this patriotic themed cake it would also be cute to make a flag on the top using strawberries, blueberries and bananas!

Red, White & Blue Jell-O Poke Cake
Ingredients:
1 box white cake mix, prepared according to package directions
1 3 oz box red Jell-O
1 3 oz box blue Jell-O
8 oz whipped topping
Patriotic sprinkles
Directions:
Prepare white cake mix according to package directions. Pour into an 8x13 pan and bake. Allow to cool.
Using the end of a wooden spoon poke holes all over the cake.
In a small bowl add red Jell-O with 1 cup boiling water. Add 1/2 cup cold water and mix well. Repeat process with blue Jell-O in a separate bowl. Using a spoon or cup pour liquid Jell-O into holes in cake. You can add as much or as little as you like. I only used about 1/2 of each.
Spread whipped topping over top of cake and top with sprinkles.
Cover and refrigerate for a minimum of 3 hours before serving.
This cake is even more delicious and moist 24 hours later. Can be stored in the refrigerator for up to 3 days.
