Are you looking for an easy one pan recipe that's delicious and full of flavor? You have to try this Pesto Chicken. Topped with fresh pesto, mushrooms, olives and provolone cheese for a delicious meal you can't resist.


Pesto Chicken

I really believe anything coated in pesto is delicious. Pesto has lots of flavor depth and it is so fresh tasting. At the end of each gardening season I use up all my fresh basil by making a big batch of pesto. I freeze it in individual ice cubes so that I can have flavorful fresh pesto all winter long. We love pesto on fish, pasta, sandwiches and this delicious Pesto Chicken. This chicken turns out extremely tender every time and full of flavors that make it one of our favorite dishes.


Pesto Chicken

One thing to note is be sure your chicken breasts are sliced thin and about the same thickness so that they will cook evenly. I had 2 very large, thick breasts I sliced in half to get 4 thin breasts. To season my chicken, I like to top them with a little Weber Kick'n Chicken Seasoning for some extra spice but it's also great with a simple mix of salt, pepper and garlic powder sprinkled on top. I always have a hard time getting shredded provolone cheese so I use pre-sliced pieces to top the chicken. Feel free to sub out mozzarella if you can't find or are not a fan of provolone. Trust me though, provolone adds an extra flavor level to this dish I think you'll love.

Pesto Chicken

 

Serves 4


Ingredients:

  • 4 thinly sliced chicken breasts

  • 1 Tbsp Weber Kick'n Chicken Seasoning

  • 1/2 cup prepared pesto

  • 8 oz can sliced mushrooms

  • 4 oz can diced olives

  • 1/2 cup shredded provolone cheese or 6 slices


Directions:

  • Preheat oven to 400 degree F.

  • Lay chicken breasts evenly spaced in a non-greased 9x13 baking dish.

  • Season each breast with Kickin Chicken or salt, pepper and garlic powder.

  • Spoon pesto over each breast, spreading over the top to coat.

  • Sprinkle mushrooms and olives on top of pesto.

  • Bake uncovered in a 400 degree oven for 20 minutes.

  • After 20 minutes, sprinkle cheese over top of chicken breasts.

  • Continue to cook for 8-10 minutes longer until cheese is melted and chicken has reached an internal temperature of 165 degrees.
