Cowboy Queso Dip

It's almost football season and you know what that means? Tailgate food! When I think of tailgating food I think of hot dogs, burgers and all the dips. This Cowboy Queso Dip is next level delicious! Simply throw everything into a baking dish or slow cooker and heat until melted then stir. Serve this with our yummy Lake Burgers and you'll be the tailgating champ. Forewarning, make this Cowboy Queso Dip one time and it'll be requested every single time, it's that good!

Cowboy Queso Dip

 

Ingredients:

  • 1 lb ground pork sausage, cooked and drained

  • 32 oz block Velveeta, cubed

  • 8 oz cream cheese

  • 8 oz shredded mexican cheese

  • 1/3 cup red onion, diced

  • 1 can black beans, drained and rinsed

  • 1 can corn, drained

  • 2 cans diced tomatoes with green chilis

  • 1 tsp garlic powder

  • 1 tsp chili powder

  • 1 tsp ground cumin

  • Juice of 1 lime


Directions:

  • Preheat oven to 400 degrees F.

  • Combine all ingredients in an 9x13 baking dish.

  • Cover with foil and bake 20-30 minutes until cheeses are melted, stirring half way through.

  • Stir to combine and serve hot with tortilla chips.


Notes:

This can also be made in a slow cooker for tailgating or parties. Add all ingredients to the base of a slow cooker and heat on high until cheese is melted. Stir to combine and turn down to low or warm setting to keep warm.
