If you're looking for a delicious cocktail to sip poolside this summer then look no further. Mint & Malibu Pineapple Refresher is a light and refreshing with flavors of fresh mint, coconut rum and Blood Orange Spindrift. It's the perfect summer drink!


Mint & Malibu Pineapple Refresher

One of my favorite things to add to any drink is fresh mint. I love the flavor it gives tea, water and especially cocktails. Recently I was craving a pineapple mojito. We had them while visiting Eleuthera Bahamas as it's their specialty drink and loved them so much we made it our specialty cocktail at our wedding reception. I didn't have the exact ingredients needed to make it so I decided to make my own twist using what I did have. This Mint & Malibu Pineapple Refresher turned out so much better than I expected. It's light, not too sweet and so refreshing to sip poolside or sitting on my back deck. This is my new favorite summer cocktail and I think you'll love it too!


Mint & Malibu Pineapple Refresher

To make this tasty summer drink you will need:


Fresh mint- I love the fresh flavors of mint in drinks and recipes. I dedicated one flower pot to mint and it comes back every summer. I use it so much and before winter I freeze it in ice cube trays so I can enjoy fresh mint even in the winter months. If you live in a warmer area I highly recommend you start a pot but if you do not grow your own you can usually find it at most grocery stores.


Lime juice- I recommend using fresh limes but in a pinch bottled can be used. The recipe calls for 4 limes juiced which would equal approximately 1/2 cup.


Coconut Rum- I personally love Malibu but use your favorite coconut rum.


Pineapple juice- Regular or light can be used. Regular will make your drink a bit sweeter but both are delicious.


Spindrift- Spindrift is an unsweetened, natural flavored sparkling water. It is very light and a great addition to cocktails. For this recipe I used Blood Orange Tangerine but Lime, Nojito, Pineapple, Mango Orange or Raspberry Lime would also be great. They have a ton of different flavors so be sure to check them out!

Directions:

  • Add all ingredients to a large pitcher and stir to combine. Serve over ice with mint leaves and lime slices for garnish.
