It's snowing here in Arkansas today and we have below freezing temps for the next few days. It's our second snow of the winter but the last one didn't even last a day before rain washed it away, which I was completely okay with. This girls blood is southern through and through, the first few days of cold and I'm the kid in the back seat asking "is it summer yet?" over and over. Don't get me wrong, snow is beautiful. But it's cold. And trying to dress 2 kids and myself to go outside to play is not my idea of fun. By the time we're dressed someones crying, someones hat is already in their eyes, someones getting mad because they can't get their shoe on themselves and we're all exhausted before we even get out the door. Only to play for 30 minutes before my toddler needs to use the bathroom. IYKYK. Summer is great, you want to go outside in your underwear, you go for it sister! Don't worry, we don't have neighbors.



Venison Chili


There are a few things I like about winter and a bowl of hot chili is one of them. It's warm and filling and just down right delicious. I usually make a big batch and freeze what we don't eat. No prep dinner, ready to eat out of the freezer is just what you need some days. My husband is a deer hunter so we've replaced all beef with venison, but this recipe is also great with ground beef or even turkey. I had to improvise a little this time around because no way was I fighting the people at the grocery store buying up all the milk, bread and eggs. I made my own copy cat chili seasoning out of spices I had on hand and swapped out the chili beans for black and kidney beans. This recipe is simple, quick and oh so delicious. It's exactly what you need on a snowy day, or any day really. My favorite way to eat it is loaded with corn chips and cheese. My husband on the other hand loves a chili dog, and my kids mostly just pick out the beans. Now excuse me while I stay in my pajamas all day eating hot chili and dreaming of hot weather.

This chili recipe freezes great! I make a big batch and store in smaller portions for a quick future meal. We mostly only use ground venison now but feel free to substitute with ground beef or even ground turkey.


30 Minute Venison Chili

 

Serves 8 Prep Time: 5 min

Total time: 30 min Cook time: 25 min


Ingredients:

  • 2 Tbsp olive oil

  • 1/2 medium yellow onion, chopped

  • 2 lbs ground deer meat (sub ground beef or turkey)

  • 1 packet regular McCormicks Chili seasoning

  • 1 packet hot McCormicks chili seasoning

  • 2 15 oz cans diced tomatoes with green chilis

  • 2 15 oz cans tomato sauce

  • 2 15 oz cans diced tomatoes

  • 2 15 oz cans chili beans (black beans or kidney beans also work great)

  • Optional toppings: shredded cheese, corn chips, sour cream, green onions, jalapeno, avocado or use it to smother a hot dog.


Directions:

  • Heat olive oil in a large soup pan over med-high heat.

  • Add onion and cook until almost tender.

  • Add deer meat and cook until browned.

  • Add seasoning, diced tomatoes, tomato sauce and beans. Stir to combine.

  • Turn heat down to low. Cover and let cook 15-20 min, stirring half way through.

  • Stir well and enjoy!
