Simply Delicious Strawberry Salad & Homemade Poppyseed Dressing

This simple salad is delicious and pretty, topped with sweet strawberries and candied nuts, spicy red onion and salty feta cheese. Toss in our easy homemade poppyseed dressing for a delectable salad you are sure to love.

I've been trying to incorporate more salads into our meals lately. It's such an easy side to your main dish and a great way to get in some healthy leafy greens and extra veggies. While this side salad may not be the healthiest of them all oh my is it delicious. You could easily make this salad a main dish by adding some grilled chicken, salmon or tossing with quinoa.

Making your own dressing is as simple as adding everything to a jar and giving it a good shake. This poppyseed dressing is one of my favorites but this salad would also be great with a balsamic vinaigrette.
Strawberry Salad & Poppyseed Dressing
Ingredients:
Salad:
Salad mix
Strawberries, sliced
Red onion, thinly sliced
Candied walnuts or pecans
Feta cheese
Dressing:
1/2 cup Mayonnaise or Vegenaise
3 Tbsp Apple Cider Vinegar
2 Tbsp Honey
2 Tbsp Sugar
1 Tbsp Poppy Seeds
Directions:
On a plate place salad mix. Top with thinly sliced onion, candied nuts, strawberries, and feta cheese.
In a jar with a lid combine mayo, vinegar, honey, sugar and poppy seeds. Place lid on tightly and shake until all ingredients are mixed well.
Add fresh ground pepper on salad if desired, top with dressing and toss.
Notes: This dressing will last in the refrigerator for up to 1 week. Shake well before each use.
