Indulge in the magic of homemade Rainbow Pudding Popsicles! Easy, colorful, and delicious - the perfect treat for St. Patrick's Day.
We love popsicles around here, I think my 3 year old has one a day. Most of them I make but we also like DeeBee's Organic Freezies and freeze Stonyfield Yogurt Tubes for yummy yogurt pops. As we get ready to celebrate St. Patricks Day we decided to make festive Rainbow Pudding Pops. They are easy and inexpensive to make, pretty rainbow colors and oh so delicious.
To make Rainbow Pudding Popsicles we used 5 oz disposable paper cups, popsicle sticks, instant pudding and neon food coloring. We chose to use vanilla pudding but you could use any lighter colored flavors such as banana cream, cheesecake, white chocolate or coconut cream. Mix up your pudding per package directions and separate into 7 bowls. Add food coloring to each bowl and stir until you have the colors of the rainbow, ROY-G-BIV. You may have to mix some colors (red+yellow=orange) or add extra drops to achieve the colors you want. Layer each color on top of each other until your cup is about 3/4 full. We topped ours with gold sprinkles to make them fun for St. Patricks Day. Place your popsicle stick in the middle and freeze. I suggest putting them in a metal baking pan or on a small cooking sheet to make it easy to transport and sit flat in your freezer. Once frozen, tear off the paper and taste the colors of the rainbow!
Rainbow Pudding Popsicles
Supplies:
5 oz disposable paper cups
popsicle sticks
instant pudding mix (1 5oz box will yield approx 5-6 pops)
milk
food coloring
sprinkles (optional)
metal baking pan or sheet to set them on
Directions:
Prepare your instant pudding per package directions.
Divide pudding mix in to 7 bowls.
Add food coloring to each bowl: red, orange, yellow, green, blue, indigo, violet. Mix and adjust until desired color is achieved.
Begin by adding a layer of red to the bottom of the cup. Top with orange, then yellow, etc.
Top with sprinkles and insert popsicle stick in middle.
Place on a baking pan and transfer to freezer for a minimum of 6 hours.
When ready to eat remove from freezer and tear off paper cup to reveal your beautiful rainbow.
