We eat a lot of chicken, so I'm always searching for new ways to cook it. It comes easy to me to throw some spices and vegetables in a casserole dish and make a delicious meal in the oven but when it comes to different ways to cook chicken on the grill, I struggle. This past summer I was bored with our same rotation of BBQ grilled chicken and pork chops. I wanted to find a new way to grill chicken that we all loved. This Cajun Marinated Grilled Chicken is now my favorite chicken marinade. It's tangy and spicy and loaded with flavor. I've made it with chicken breasts and drum sticks and both turn out amazing every time. I've never used chicken thighs but I imagine they would be great as well.

Cajun Marinated Grilled Chicken
Serves 4
Ingredients:
3 lbs chicken legs, thighs or breasts
1/2 cup olive oil
1/4 cup vinegar
1 1/2 Tbsp ketchup
2 1/2 Tbsp Tony Chacheres Creole Seasoning
1 1/2 tsp Italian Seasoning
1 1/2 tsp garlic powder
1/2 tsp black pepper
1/4 tsp salt
Directions:
Combine all ingredients in a resealable bag. Refrigerate and allow to marinate for at least 6 hours or over night.
Grill chicken until internal temperature reaches 165 degrees F and juices run clear.
