The weather is warming up, the flowers are blooming and Easter is almost here meaning it's spring! I love the warmer weather, not only because I hate being cold but to me it also means more options of fresh fruits and vegetables. I'm ready to move on from the heavy comfort winter foods to light, fresh and fruity flavors. These Strawberry Cream Cheese Puff Desserts are the absolute perfect dessert for spring and summer. They're light and not too sweet for a delicious dessert everyone will love and keep coming back for. Best served at room temperature they're the perfect dessert to serve at a party and not to mention the pretty pink and cute designs you can make them.
These Strawberry Cream Cheese Puff Desserts are so easy to make using store bought puff pastry sheets. I had fun making mine in cute little bunny shapes for Easter but you can make simple squares, flowers for spring or any shape you like. Simply cut them out using a knife or cookie cutter and bake as directed on package. After allowing them to cool, cut in half and fill with a yummy cream cheese filling made of cream cheese, powdered sugar, vanilla extract and strawberry jam. Top with fresh strawberries and try to eat just one, it's impossible!

Strawberry Cream Cheese Puff Desserts
Ingredients:
1 sheet puff pastry
6 oz cream cheese, softened
2 Tbsp powder sugar
1/2 tsp vanilla extract
3 Tbsp strawberry jam
1 cup fresh strawberries, sliced thin
Extra powdered sugar to dust tops (optional)
Directions:
Lay puff pastry sheet out flat. Using a sharp knife or a cookie cutter cut in to squares or any shape you like.
Place on a cooking sheet and bake according to package directions.
Allow puff pastries to cool.
While pastries are cooling make filling by adding cream cheese, powder sugar, vanilla and jam to a bowl. Stir to combine until smooth.
Using a sharp knife slice each puff pastry in half creating a top and bottom layer.
On the bottom half of the puff pastry spread a layer of cream cheese filling. Top with sliced strawberries. Place top half of puff pastry on top. Repeat with each puff pastry.
Dust with extra powdered sugar if desired.
Serve immediately or store in an air tight container for up to 3 days.
