Customize Cajun Veggie & Sausage Sheet Pan Meal:
I also like to call this my "clean out the fridge meal." There are so many variations you can create based on what you have on hand or your favorite vegetables. Some great alternatives would be red potatoes, sweet potatoes, butternut squash, cauliflower, brussel sprouts, fresh green beans or yellow squash. You can also switch up the protein or add extra meat like chicken or shrimp. Be sure to note if adding shrimp, let vegetables cook until almost done then add shrimp for the last few minutes of cooking.
How to serve:
Our favorite way to eat this is over a bed of brown rice. Other options would be over quinoa or couscous or for low carb try cauliflower rice or sautéed greens like spinach or kale

Cajun Veggie & Sausage Sheet Pan Meal
Serves 4
Ingredients:
1 red onion
1 small zucchini
1/2 lb baby carrots
2 cups broccoli florets
8 oz white mushrooms
1 bell pepper, any color
13 oz smoked sausage
2 Tbsp oil
1 tsp Oregano
1/2 tsp Garlic powder
1 Tbsp Tony Chachere's Creole Seasoning
Directions:
Preheat oven for 400 degrees.
Chop all veggies and sausage into bite sized pieces and place on a baking sheet.
Add oil and seasonings and mix to coat evenly.
Bake at 400 for 20-30 minutes or until veggies are fork tender.
