I love traditional deviled eggs and I love spicy so I knew a Jalapeño Deviled Egg would be delicious. But oh my, these turned out so much better than I expected. Even my mom who does not like deviled eggs liked this version! Fresh and pickled jalapeños along with pickled jalapeño juice and a pinch of cayenne gives these a nice heat. Balanced with sweet mayo, tangy sour cream and fresh cilantro for a delectable spicy deviled egg you will love.
Jalapeño Deviled Eggs make the perfect appetizer or side dish for any meal, a great way to celebrate Cinco De Mayo or a Mexican Fiesta, or to use up some of those fresh jalapeños from the garden.

Jalapeño Deviled Eggs
Ingredients:
6 hard boiled eggs, cooled and peeled
1 Tbsp butter, softened
1 fresh jalapeño, minced
2 Tbsp mayonnaise
1 Tbsp sour cream
1 tsp yellow mustard
2 Tbsp pickled jalapeños, chopped
1 1/2 Tbsp pickled jalapeño juice
1 Tbsp fresh cilantro, chopped
1/2 tsp salt
1/2 tsp pepper
pinch of cayenne (optional)
Fresh jalapeño slices and cilantro leaves for garnish
Directions:
Slice boiled eggs lengthwise. Remove yolks into a small bowl, set egg whites aside.
Add softened butter to yolks and use a fork to mash until combine and mostly smooth.
Add all remaining ingredients to yolk and mix until well combined. Taste and add more salt, pepper or cayenne to taste.
Spoon mixture into egg whites.
Garnish with fresh jalapeño slices and fresh cilantro leaves.
