Jalapeño Deviled Eggs

I love traditional deviled eggs and I love spicy so I knew a Jalapeño Deviled Egg would be delicious. But oh my, these turned out so much better than I expected. Even my mom who does not like deviled eggs liked this version! Fresh and pickled jalapeños along with pickled jalapeño juice and a pinch of cayenne gives these a nice heat. Balanced with sweet mayo, tangy sour cream and fresh cilantro for a delectable spicy deviled egg you will love.

Jalapeño Deviled Eggs make the perfect appetizer or side dish for any meal, a great way to celebrate Cinco De Mayo or a Mexican Fiesta, or to use up some of those fresh jalapeños from the garden.

Jalapeño Deviled Eggs

 

Ingredients:

  • 6 hard boiled eggs, cooled and peeled

  • 1 Tbsp butter, softened

  • 1 fresh jalapeño, minced

  • 2 Tbsp mayonnaise

  • 1 Tbsp sour cream

  • 1 tsp yellow mustard

  • 2 Tbsp pickled jalapeños, chopped

  • 1 1/2 Tbsp pickled jalapeño juice

  • 1 Tbsp fresh cilantro, chopped

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • pinch of cayenne (optional)

  • Fresh jalapeño slices and cilantro leaves for garnish


Directions:

  • Slice boiled eggs lengthwise. Remove yolks into a small bowl, set egg whites aside.

  • Add softened butter to yolks and use a fork to mash until combine and mostly smooth.

  • Add all remaining ingredients to yolk and mix until well combined. Taste and add more salt, pepper or cayenne to taste.

  • Spoon mixture into egg whites.

  • Garnish with fresh jalapeño slices and fresh cilantro leaves.
